Ingredients
- 1 lb boneless skinless chicken thighs, cut into 1-inch pieces

1/4 cup Island Fire hot sauce
- 1/4 cup soy sauce
- 2 tbsp lime juice
- 2 tbsp brown sugar
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 green onions, chopped
- 1/2 tsp ground allspice
- 1/2 tsp ground thyme
- 1/4 tsp cinnamon
- Salt, to taste
- Black pepper, to taste
- 2 tbsp olive oil
- 1 bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 8 wooden skewers, soaked in water
Directions
- In a bowl, combine the hot sauce, soy sauce, lime juice, brown sugar, garlic, ginger, green onions, allspice, thyme, cinnamon, salt, black pepper, and olive oil. Mix well to create a marinade.
- Add the chicken pieces to the marinade, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 30 minutes, preferably 2-4 hours.
- Preheat the grill to medium-high heat. Thread the marinated chicken, bell peppers, and red onion onto the soaked skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and serve hot, garnished with extra green onions if desired.
Recipe Note
Soak your skewers: If using wooden skewers, soak them in water for 30 minutes so they don’t burn on the grill.
Marinate longer for more flavor: While 1 hour works, marinating the chicken overnight in the fridge brings out deeper jerk flavor.
Grill or oven: No grill? Use your oven broiler or air fryer at 400°F for 15–18 minutes, turning halfway.
